Directions : Whisk together 1 cup of mix and 1/2 cup water until mostly smooth. Do not overmix. Some lumps should remain. Preheat skillet to medium heat, about 325°F. Lightly oil hot griddle. Pour scant ¼-cup portions of batter and cook until bubbles begin to form on the top, about 2 minutes. Flip and cook another 1–2 minutes, until done. Serve hot. Makes 8–10 medium pancakes.
